Charred Broccolini Caesar, Kimchi & Chili Crisp

Charred broccolini replaces romaine in this Caesar-inspired salad, tossed with kimchi, chili crisp, and Caesar dressing.

Ingredients
  • 2 bunches broccolini

  • Neutral oil, for roasting

  • Parmesan

  • ½ cup kimchi, chopped

  • 1–2 tablespoons chili crisp, to taste

  • Caesar dressing

  • Microgreens or soft herbs, to finish (optional)

Method

1. Broil the broccolini
Set the oven to broil on high. Toss broccolini with oil and arrange in a single layer on a sheet pan. Broil until deeply charred and crisp at the edges, about 6–10 minutes, turning once. Let cool slightly, then chop into bite-size pieces.

2. Assemble
In a large bowl, combine charred broccolini with remaining ingredients and toss.

3. Finish
Transfer to a bowl and top with microgreens or herbs if using. Serve cold or at room temperature.
