Charred broccolini replaces romaine in this Caesar-inspired salad, tossed with kimchi, chili crisp, and Caesar dressing.
Ingredients
2 bunches broccolini
Neutral oil, for roasting
Parmesan
½ cup kimchi, chopped
1–2 tablespoons chili crisp, to taste
Caesar dressing
Microgreens or soft herbs, to finish (optional)
Method
1. Broil the broccolini
Set the oven to broil on high. Toss broccolini with oil and arrange in a single layer on a sheet pan. Broil until deeply charred and crisp at the edges, about 6–10 minutes, turning once. Let cool slightly, then chop into bite-size pieces.
2. Assemble
In a large bowl, combine charred broccolini with remaining ingredients and toss.
3. Finish
Transfer to a bowl and top with microgreens or herbs if using. Serve cold or at room temperature.
